Cherry Ice Cream

Ingredients

  • 400 g sour cherries (jar)
  • 1 Tbsp vanilla sugar
  • 1 Vanilla bean
  • 300 ml milk
  • 80 g sugar
  • 2 Eggs
  • 200 ml whipping cream
  • 12 ice pop sticks

Instructions

    Drain the cherries, catching the juice, and let them drain well. Remove about 150 g, mix with the vanilla sugar, and set aside.

    Split the vanilla bean lengthwise. Whisk the milk, sugar, and eggs over a hot water bath until creamy. Then stir in cold (perhaps in an ice bath). Remove the vanilla bean. Beat the cream stiffly and fold it together with the cherries. Gently whisk in about 100 ml of cherry juice to create a marbled pattern.

    Pour the ice cream into a shallow metal bowl, place in the freezer for at least 3 hours, stirring every 30 minutes during the first 2 hours (or finish in an ice cream maker).

    For serving, use an ice pop skewer to cut spheres and press them into the sticks. Add about 1 tbsp of the reserved cherries and serve.
