Apple Cinnamon Muffins

Ingredients
- 280 g flour
- 2 Apples
- 1 tsp cinnamon
- 2 tsp Baking powder
- 0.5 tsp Baking soda
- 1 egg
- 80 g sugar
- 80 ml plant oil
- 200 g Buttermilk
- 125 ml apple juice
- butter (for muffin tin)
- 4 tbsp sugar-cinnamon mixture
Instructions

Grease the cavities of a muffin tin and place the pan in the freezer.

Peel, quarter, core apples and cut into strips. Dice 2/3 finely.

Mix flour with apple cubes, cinnamon, baking powder and baking soda.

In a large bowl lightly whisk the egg, then add sugar, plant oil, buttermilk and apple juice; stir well.

Add the dry mixture to the wet batter and stir just until the dry ingredients are moistened. Mix in sugar and cinnamon.

Fill the pan cavities with dough, arrange apple strips fan‑shaped on top, sprinkle with sugar-cinnamon, and bake in a preheated oven at 180°C (356°F) for about 25–30 minutes. Let muffins rest in the tray for 5 minutes, then remove from molds and cool.
