Ingredients

  • 100 g birch sugar
  • 110 ml whipping cream
  • 25 g butter
  • Salt

Instructions

    Bring birch sugar and 30 ml water to a boil while stirring. Add 80 ml cream in spoonfuls and simmer over medium heat until the mixture turns golden brown, stirring regularly.

    Remove from heat. First stir in butter, then add 10 ml water and the remaining cream.

    Season caramel sauce with salt and whisk until smooth.
