Muesli Bars with Apricots and Flax Seeds

Ingredients

  • 50 g Pistachios
  • 50 g Pumpkin seeds
  • 200 g dried apricots
  • 50 g sunflower seeds
  • 30 g flax seeds (3 tbsp)
  • 170 g rolled oats
  • 100 g steel-cut oats
  • 0.5 tsp cinnamon
  • 45 g butter (3 tbsp)
  • 1 Banana
  • 3 tbsp honey
  • 100 g unsweetened applesauce
  • 100 g cashew butter

Instructions

    Roughly chop the pistachios and pumpkin seeds. Cut the apricots into small cubes. Combine pistachios, pumpkin seeds, and apricots with sunflower seeds, flax seeds, rolled oats, and cinnamon in a mixing bowl and mix well.

    Slowly melt the butter in a saucepan over low heat. Peel and mash the banana. Mix the banana, honey, applesauce, and cashew butter with the butter, add to the oat mixture, and mix well.

    Spread the mixture evenly on a baking sheet lined with parchment paper (20 x 30 cm) about 2 cm thick and press down slightly. Bake in a preheated oven at 160 °C (140 °C convection; Gas: Level 2) for approximately 25-30 minutes until golden brown. Remove from the oven, let cool, and cut into 24 pieces.
