French Toast with Rosemary Peach Topping

Ingredients

  • 2 Eggs (M)
  • 3 tbsp Milk (3.5% fat)
  • 4 slices whole wheat bread
  • 2 Nectarines
  • 1 sprig rosemary
  • 3 tbsp Butter (15 g)
  • 3 tbsp honey
  • 0.5 Bio Lime
  • 125 g Nonfat quark
  • 50 g Goat cheese (45% fat i. Tr.)

Instructions

    Whisk eggs and milk together and pour into a shallow baking dish. Arrange bread slices on top. Once they have absorbed liquid from one side, flip and let the remaining egg milk soak in.

    Wash, halve, pit, and slice the nectarines. Wash and dry the rosemary. Heat 1 tsp of butter in a medium skillet. Add the nectarines, rosemary, and 1 tsp of honey and sauté over high heat for 2-3 minutes, stirring occasionally. Remove from heat; remove the rosemary sprig before serving, and pluck some needles.

    Meanwhile, heat the remaining butter in a large skillet. Fry the bread slices in it for about 4 minutes on each side until golden brown over medium heat.

    Rinse and pat dry the lime half, then zest and juice it. Mix the lime zest with quark and goat cheese.

    Arrange the French toast with peaches and goat cheese dip. Drizzle with remaining honey and a few splashes of lime juice, sprinkle with plucked rosemary needles, and enjoy warm.
