Mozzarella-Filled Tacos

Ingredients
- 400 g mozzarella
- 1 onion
- 1 Garlic clove
- 2 tbsp white balsamic vinegar
- Salt
- pepper (ground)
- 2 tbsp olive oil
- 750 g tomatoes
- 1 red chili pepper
- 2 tbsp Vegetable oil
- 250 ml vegetable broth
- a pinch of sugar (optional)
- 8 taco shells (ready-made, 12 cm diameter)
- 1 iceberg lettuce

Drain the mozzarella and cut into small cubes. Peel and finely chop the onion and garlic. Mix the onion and mozzarella with vinegar, salt, and pepper, then marinate with olive oil. Blanch the tomatoes, peel, core, and dice them. Wash, deseed the chili pepper, and add it with garlic to the tomatoes. Heat oil in a pan and sauté garlic and chili pepper.

Add tomatoes, pour in broth, and simmer over medium heat until thickened. Season with salt and sugar, then let cool. Preheat oven to 180°C (350°F) and briefly toast taco shells. Clean, wash, dry, and shred lettuce into fine strips. Fill tacos with mozzarella and lettuce, garnish with chili rings, and serve tomato sauce separately.
