Meat-Filled Artichokes
A hearty dish of artichokes stuffed with minced pork and Parmesan, seasoned with thyme and garlic, served with fresh tomatoes and a drizzle of olive oil. Enjoy this recipe from Spoonsparrow!
Ingredients
- 4 large artichokes
- 0.5 untreated lemon
- 2 slices white bread
- 400 g minced pork
- 2 tbsp freshly grated Parmesan
- 1 egg
- 2 tbsp fresh chopped thyme
- Salt
- Pepper
- 1 Garlic clove
- 6 tomatoes
- 2 tbsp olive oil

Wash and trim the artichokes, removing stems and tough leaf tips. Place them in a pot and drizzle the cut surfaces with lemon juice.

Soak the white bread slices in a little water, then squeeze out excess liquid, tear into pieces, and mix with the minced pork in a bowl. Add Parmesan, egg, thyme, salt, and pepper; combine well and spread the mixture onto the artichokes.

Peel and finely chop the garlic. Wash the tomatoes, cut off the stems, dice them, and mix with the garlic. Spread this over the stuffed artichokes, season with salt and pepper, and drizzle with olive oil. Cover and bring to a simmer, then let cook gently for about 50 minutes until the artichokes are tender; add a little water if needed.
