Ingredients

  • 250 g dark chocolate couverture
  • 1 egg (medium) and yolk
  • 4 tsp espresso powder
  • 1 pinch salt
  • 30 ml grappa
  • 400 ml whipping cream
  • 4 candied violet buds
  • 4 candied organic rose petals

    Cut a few pieces of the chocolate with a sharp knife for garnish, set aside. Cut the remaining chocolate into chunks and place in a bowl. Melt over a hot water bath, stirring occasionally. Let cool slightly.

    Beat the egg and yolk with espresso powder and salt in a second bowl. Whisk vigorously over the hot water bath until frothy. Stir in grappa and melted chocolate. Continue whisking in a cold water bath until the mixture is room‑warm. Beat the cream stiffly and fold into the mixture. Spoon the mousse into glasses and chill. Serve garnished with candied violets, rose petals, and chocolate pieces.
