Ingredients
- 3 eggs
- 3 egg yolks
- 150 g dark chocolate (70% or higher)
- 150 g bittersweet chocolate
- 40 ml cognac
- 1 teaspoon espresso (very strong)
- 400 ml whipping cream
- 100 ml whipping cream (for serving)
Instructions

Chop the chocolate and melt it over a hot water bath, set aside and let cool slightly.

Whisk the eggs with the Cognac over the water bath into a firm white‑creamy mixture; the volume should double. Remove the bowl from the water bath and whisk the mixture cold until it reaches about room temperature.

Beat the cream stiffly.

Mix the chocolate with the espresso and fold it into the egg mixture, then gently fold in the whipped cream. Spoon into small cups and chill for at least 6 hours.

For serving beat the remaining cream half‑stiff, pour over the mousse, and serve each cup with two spoons of topping.
