Peach Ice

Ingredients

  • 2 Eggs
  • 75 g powdered sugar
  • 150 ml whipping cream
  • 1 tsp lemon juice
  • 250 g peaches (canned)
  • 100 g candied violet buds
  • 100 g yellow sugar pearls
  • oil for the mold

Instructions

    Separate the eggs and place the egg whites in a large bowl to chill. Beat the yolks in a mixing bowl, gradually whisk in the powdered sugar and whip over a hot water bath with a whisk until thick and frothy. Cool quickly by beating into ice water.

    Next beat the cream stiff and fold it into the chilled egg mixture. Whip the egg whites with lemon juice until stiff and fold them into the ice cream base. Drain the peaches and puree them. Fold in half of the violet buds and sugar pearls with the ice cream mixture.

    Oil a terrine mold lightly. Line it overhanging with plastic wrap, pour in the parfait mixture and smooth the top. Cover with plastic wrap and freeze completely for at least 6 hours.

    Remove the ice about 10 minutes before serving. Unwrap the partially frozen portion, break it up, and remove all plastic wrap.

    Slice into rounds (dip the knife briefly in hot water for clean cuts) and serve with remaining violet buds and sugar pearls.
