Moroccan Date Couscous

Ingredients

  • 200 g instant couscous
  • 60 g sugar
  • 2 tbsp lemon juice
  • 40 g dried apricots
  • 150 g dried dates
  • 80 g shelled almonds
  • 0.5 tsp ground cinnamon
  • 2 tbsp orange blossom water
  • 1 tsp rose water
  • brown sugar (for sprinkling)

Instructions

    Pour about 300 ml boiling water over the couscous and let it soak for about 10 minutes, then fluff with a fork.

    Mix the sugar with 3 tbsp water and lemon juice and simmer for about 5 minutes until fizzy. Meanwhile, chop apricots into small pieces, pit half of the dates and roughly chop them, and also roughly chop the almonds. Add the dates, apricots, almonds, and cinnamon to the hot syrup, remove from heat and let cool slightly. Stir in orange blossom water and rose water.

    Combine well with the couscous and divide into bowls. Sprinkle with remaining dates and brown sugar.
