Ingredients

  • 4 egg whites
  • 2 tsp lemon juice
  • 250 g very fine sugar
  • 75 g finely grated chocolate
  • 125 g ground almonds

Instructions

    Preheat the oven to 120°C fan. Line a baking sheet with parchment paper. Beat the egg whites with the lemon juice into stiff peaks, gradually adding the sugar and continuing until a firm, glossy meringue forms. Fold in the finely grated chocolate and gently fold in the ground almonds. Fill a piping bag fitted with a star tip with the mixture.

    Pipe 5 cm diameter circles onto a parchment-lined baking sheet. Bake the meringue rings in the preheated oven for about 30-40 minutes until pale, keeping them firm on the outside and slightly soft inside. Remove from the sheet using the parchment and cool on a wire rack.
