Ingredients

  • 200 g cauliflower
  • 200 g broccoli
  • 1 bulb fennel
  • 2 carrots
  • 2 whole vegetable onions
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1 Zucchini
  • 200 g mushrooms
  • 2 stalks celery
  • 20 garlic cloves
  • 20 anchovy fillets (in oil)
  • 500 ml olive oil

    Wash, trim and cut the vegetables into bite-sized pieces.

    Depending on taste, cook the vegetables a few minutes in hot steam until al dente or leave them raw. Arrange decoratively on large platters and serve at the table.

    For the sauce, peel the garlic and slice thinly. Rinse the anchovy fillets and pat dry. Combine garlic, anchovies and oil in a pot, heat and simmer for about 30 minutes. Place the pot over a double boiler and dip the vegetables into the sauce.
