Mixed Salad with Pine Nuts and Toasted Bread Cubes

Ingredients
- 3 tbsp herb vinegar
- salt, pepper from the mill
- 1 tsp medium-hot mustard
- 8 tbsp olive oil
- 50 g Pine nuts
- 300 g tomatoes
- 1 small cucumber
- 1 head lettuce
- 1 small bunch basil
- 6 toast bread slices

For the dressing whisk together vinegar, salt, pepper and mustard. Stir in 3 tbsp oil. Roast pine nuts in a dry pan.

Wash tomatoes, remove stems and halve them. Remove seeds and dice finely. Wash cucumber, trim ends and dice finely.

Clean lettuce, wash and spin dry. Rinse basil, shake dry and tear leaves into fine strips. Line a bowl or plate with the salad. Mix tomatoes and cucumbers with the dressing and arrange on the bed of lettuce. Sprinkle pine nuts and basil over it.

Trim the crust from the bread and cut into cubes. Heat remaining oil and fry the cubes until golden brown. Add the bread cubes to the salad.
