Green Asparagus with Cheese Sauce

Ingredients
- 1 tbsp butter
- 2 tsp flour
- 250 ml milk
- 80 g cream cheese
- salt, pepper from the mill
- a pinch grated nutmeg
- 3 tbsp dry white wine
- 2 kg green asparagus
- 2 Tomatoes
- 1 chervil

Heat butter for the sauce. Sauté flour in it. While stirring pour in milk and bring slowly to a boil. Stir in cheese and let melt. Season with salt, pepper, nutmeg and wine. Keep warm.

Wash asparagus and trim ends. Cook in salted water 10-12 minutes. Briefly blanch tomatoes, shock them, peel skins off. Halve tomatoes, remove seeds and finely dice.

Rinse chervil, shake dry, pluck leaves and roughly chop. Drain asparagus. Arrange green asparagus with cheese sauce together with tomato cubes. Serve with chervil on top.
