Ingredients

  • 1 iceberg lettuce
  • 1 bunch radishes
  • 2 Zucchini
  • 200 g tomatoes
  • 2 hard-boiled eggs
  • 1 egg yolk
  • Salt
  • 0.5 tsp maple syrup
  • mustard powder
  • 3 tsp lemon juice
  • 100 g plant oil
  • 1 tsp paprika powder
  • 100 g heavy cream
  • 1 sprig fresh tarragon
  • 2 sprigs Basil

Instructions

    Whisk together the egg yolk, salt, mustard powder, maple syrup, lemon juice and oil to make a mayonnaise. Stir in paprika, whip the heavy cream until stiff peaks form and fold it in. Wash, dry, finely chop the herbs and mix them in. Chill the salad sauce.

    Wash the iceberg lettuce and quarter it. Slice the radishes into thin rounds. Wash, pat dry and cut zucchini into eighths. Wash, pat dry and cut tomatoes into eighths. Peel and quarter the hard-boiled eggs. Arrange everything on a plate and serve with the dressing.
