Ingredients
- 8 thick Regensburger sausages
- 2 onions
- 2 tbsp vinegar
- 4 tbsp oil
- 1 tsp sharp mustard
- Salt
- black pepper (freshly ground)
- 2 tbsp chopped chives

Peel the sausages and slice them thinly. Arrange them in a flat, brick‑like pattern in a shallow bowl.

Peel the onions, cut into thin rings, and distribute over the sausage slices.

For the vinaigrette whisk vinegar with salt, pepper, and mustard in a small bowl; slowly drizzle in oil while whisking, then pour over the sausages and onion rings. Sprinkle with freshly ground pepper and chopped chives.
