Ingredients

  • 50 g small shiitake mushrooms (cleaned)
  • 2 tsp light miso paste
  • 1 tsp miso paste
  • 2 tbsp finely sliced scallion rings
  • 1 tsp wakame seaweed (for the miso soup)
  • 600 ml water
  • 1 piece dashi seaweed
  • 2 tbsp bonito flakes
  • dandelion

Instructions

    Bring dashi seaweed and bonito flakes to a boil with water, let steep for 10 minutes and strain.

    Stir in miso paste and bring to a boil, add mushrooms and wakame and simmer. Arrange in bowls and garnish with scallions and dandelion.
