Ingredients
- 50 g small shiitake mushrooms (cleaned)
- 2 tsp light miso paste
- 1 tsp miso paste
- 2 tbsp finely sliced scallion rings
- 1 tsp wakame seaweed (for the miso soup)
- 600 ml water
- 1 piece dashi seaweed
- 2 tbsp bonito flakes
- dandelion

Bring dashi seaweed and bonito flakes to a boil with water, let steep for 10 minutes and strain.

Stir in miso paste and bring to a boil, add mushrooms and wakame and simmer. Arrange in bowls and garnish with scallions and dandelion.
