Ingredients

  • 100 g small onions (2 small onions)
  • 150 g celeriac (1 piece)
  • 200 g pastinakes
  • 2 tsp Rapeseed Oil
  • 750 ml vegetable broth
  • 30 g Parmashinken (2 slices)
  • Pepper
  • Salt
  • 50 ml Soy cream

Instructions

    Peel and finely dice the onions. Wash, peel, and cut the celeriac and pastinakes into large cubes.

    Heat 1 tsp of oil in a pot. Sauté the onions over medium heat until translucent. Add the pastinakes and celeriac and continue sautéing for 3–4 minutes.

    Add broth and bring to a boil. Simmer over medium heat for 30–35 minutes, until the vegetables are very soft.

    Meanwhile, brush the Parmashinken with the remaining oil, season with pepper, then heat a pan and fry the slices over medium heat for 2–3 minutes. Place on a plate and let cool.
