- 2 heads of cabbage
- 1 onion
- 2 tbsp butter
- 1 heaping tbsp flour
- 750 ml meat broth (homemade or instant)
- 200 g whipping cream
- Salt
- black pepper (freshly ground)
- nutmeg
- Lemon juice
- chives (for garnish)
Instructions

Wash, core, dry and finely slice the cabbage. Peel and dice the onion. Heat butter in a pot and sauté the onion until translucent, then sprinkle flour and cook until lightly browned. Gradually stir in broth and simmer for 10-15 minutes, stirring occasionally. Set aside 4 tbsp of cabbage strips; add the rest to the soup. Pour in cream, season with salt, pepper, nutmeg, and lemon juice, and simmer for another ~5 minutes. Finally puree the soup and adjust seasoning.

Serve the soup on plates or bowls and garnish with remaining cabbage strips and chives.
