Mint Granita with Pineapple Juice

Ingredients

  • 2 pineapple
  • 250 g sugar
  • 2 vanilla pods
  • zest of one untreated lemon
  • 250 g sugar
  • 1 bunch mint
  • 120 ml sparkling water
  • mixed berries of choice (e.g., strawberries, raspberries)

Instructions

    Wash, trim and drain the berries.

    Peel the pineapple, remove the core and cut into cubes.

  3. 3.

    Bring 2 l water with sugar, split vanilla pods and lemon zest to a boil. Pour over the pineapple pieces and let steep in the refrigerator for about 12 hours. Remove the vanilla pods and blend.

    For the granita bring 50 cl water with sugar to a boil, remove from heat, add mint and let steep for 15 min.

    Then pour into a shallow container, add sparkling water and freeze for about 6 hours. Every 30 minutes break up with a fork and finally gently stir in the fruit. Fill glasses and top with pineapple granita. Serve garnished with mint leaves.
