Ingredients

  • 0.5 bundle spring onions
  • 1 Garlic clove
  • 1 green bell pepper
  • 100 g green beans
  • 100 g peas (frozen)
  • Salt
  • pepper (ground)
  • 300 g tomatoes
  • 100 g Serrano ham
  • 2 tbsp olive oil
  • 50 ml dry sherry
  • butter (for the molds)
  • 8 eggs
  • Tabasco

Instructions

    Clean, wash and slice spring onions into thin rings. Peel garlic and finely chop. Wash pepper, trim, deseed and dice finely.

    Wash beans, cut off ends and cut into pieces. Cook with peas in boiling salted water for about 5 minutes, drain in a sieve and rinse cold. Briefly blanch tomatoes, shock, peel, quarter, seed and dice.

    Slice ham into strips and crisp in a dry pan until golden, set aside. Heat olive oil in the same pan, sauté onions and garlic until translucent, then add pepper, beans, peas, tomato cubes and sherry; simmer for another 4 minutes.
