Mini Spinach Quiches

Ingredients
- 125 g spinach
- 1 onion
- 1 tbsp butter
- 1 tsp freshly chopped sage leaves
- 1 tsp chopped thyme
- 150 g crème fraîche
- 0.5 package puff pastry (225 g)
- Salt
- ground pepper
- nutmeg
- 2 tsp lemon juice

Preheat the oven to 220°C.

Let the puff pastry thaw while lying side by side. Wash, trim and rinse the spinach, then collapse it in boiling salted water; drain, shock, squeeze out excess liquid with your hands, loosen slightly and roughly chop. Peel the onion and cut into cubes or fine strips, then sauté in hot butter until translucent. Add the spinach and herbs, cook briefly, then stir in the crème fraîche. Season with nutmeg, lemon juice, salt and pepper.

Roll the puff pastry on a lightly floured surface and cut out 4 circles about 12 cm in diameter. Roll up excess dough into thin strips for the edges. Place the pastry circles on a baking sheet lined with parchment paper, brush the edges with water and press them onto the pastry to form rims. Fill the bottoms with spinach mixture and bake the mini quiches in the preheated oven for about 30 minutes until golden brown. Serve immediately.
