Mini Quark Strudel
Mini quark strudel with cherry filling by Spoonsparrow: Sweet strudel with a light, fruity acidity. Light pastry to lean back and enjoy.
Ingredients
- 200 g frozen sour cherries
- 10 g butter
- 200 g Low-fat quark
- 1 egg
- 2 tbsp spelt semolina
- 2 tbsp liquid honey
- 4 sheets strudel dough
- 4 tbsp milk (1.5% fat)
- 40 g whole-grain breadcrumb crumbs (4 tbsp)
Instructions

Let the cherries thaw in a bowl. Meanwhile, melt the butter in a small saucepan.

Whisk together quark, egg, semolina, melted butter and honey in another bowl. Fold in the cherries.

Lay each sheet of strudel dough on parchment paper. Brush with 2 tbsp milk and fold it half-way.

Sprinkle breadcrumbs over the dough, leaving a border of about 1.5 cm.

Spread filling across the lower third of each dough sheet. Fold in the sides and roll into small strudles. Brush with remaining milk.

Line a baking tray with parchment paper. Place the mini quark strudles on it and bake in a preheated oven at 180 °C (fan: 160 °C, gas: level 2–3) on the middle rack for 20–25 minutes.
