Ingredients

  • 0.5 leek stalk
  • 1 celery stalk
  • 200 g small potatoes
  • 1 Garlic clove
  • 4 tomatoes
  • 2 corn cobs
  • 2 EL Butter
  • 1 olive oil
  • 1 TL grated lemon zest
  • 1 EL dried thyme
  • 2 EL tomato paste
  • 800 ml fish stock
  • 3 EL lemon juice
  • 200 ml tomato juice
  • 400 g Kaisergranat
  • 200 g shrimp (prepped and deveined)
  • 250 g coarse pork sausage
  • Salt
  • Pepper

Instructions

    Wash, trim, and dice the leek. Wash and dice the celery. Wash potatoes and cut into large pieces. Mince garlic. Wash tomatoes and cut into chunks. Trim corn cobs and cut into ~2 cm thick pieces.

    Melt butter with olive oil in a large pot. Add leek, celery, and garlic; sauté. Then add lemon zest, thyme, and tomato paste; cook briefly. Deglaze with fish stock, then pour in lemon juice and tomato juice. Add corn and potatoes and simmer for about 15 minutes. Meanwhile wash Kaisergranat, pat dry, and roughly chop. Slice sausage. Add both to the stew with shrimp and simmer another 5-10 minutes. Season with salt and pepper and serve.
