Ingredients

  • 2 egg whites
  • 130 g sugar
  • 125 g almond sticks
  • 125 g dark chocolate shavings
  • 1 tsp instant espresso powder

Instructions

    Roast the almond sticks in a dry pan until golden yellow, then let them cool. Mix with the chocolate shavings and espresso powder.

    Beat the egg whites very stiffly, adding the sugar at the end as you gradually pour it in. Fold in the almond‑chocolate‑espresso mixture.

    Drop small mounds onto parchment paper on a baking sheet using two teaspoons, and bake in a preheated oven at 160°C for about 20–25 minutes until very pale.
