Melons Sorbet

Ingredients
- 1 Lime
- 200 g sugar
- 200 ml water
- 100 ml dry sparkling wine
- 1 cantaloupe melon
- lemon balm (lime zest)

Wash, peel, and juice the lime.

Add sugar, lime zest and juice, and water to a pot; bring to a boil while stirring, then simmer for about 3 minutes. Strain and top with sparkling wine.

Cut the melon in half, remove seeds, and peel. Chop the flesh, finely puree it, and mix with the sugared liquid.

Transfer everything into a metal bowl and place in the freezer for approximately 6 hours. After an hour, whisk well with a fork; continue freezing, stirring every half hour!

Serve by spooning sorbet into chilled glasses or arranging in chocolate or waffle cups as desired.
