Melon Soup

A refreshing cold melon soup made with fresh ingredients from the chilled salad category. Try this and other recipes from Spoonsparrow!

Ingredients

  • 2 small netted melons
  • 2 passion fruits
  • Juice of 1 lime
  • 2 untreated oranges
  • 1 tbsp honey
  • 6 ice cubes

Instructions

    Cut a lid in a zigzag pattern on each melon. Scoop out the seeds with a tablespoon. Use a small pearl cutter to punch out balls and scrape out the remaining flesh, being careful not to damage the rind and leaving about 1 cm of flesh as a sturdy shell.

    Remove the peel from one orange (do not cut the white pith) and finely dice it. Squeeze the juice from both oranges.

    Blend the scooped flesh with lime juice, orange juice, ice cubes, and honey until smooth. Scoop out the passion fruit pulp and add it along with the melon balls and orange zest to the chilled bowl. Fill the hollowed melons with the mixture and serve.
