Melon Salad with Ham

Ingredients
- 1 large sugarcane melon (e.g., Galia or honeydew)
- 0.5 untreated lemon
- 0.5 untreated orange
- 4 tbsp olive oil
- coarse salt
- Pepper (freshly ground)
- sugar
- 1 handful fresh herbs (e.g., mint, parsley, chervil)
- 300 g raw ham (thin slices, e.g., San Daniele)
Instructions

Halve the melon, remove seeds, cut into wedges and scoop out flesh. Cut each wedge in half again and arrange pieces on four plates.

Wash lemon and orange hot, grate thin zest from each. Squeeze juice and whisk with zest, oil, a pinch of salt and sugar. Taste and adjust dressing. Rinse herbs, shake dry and pluck leaves.

Drizzle ham over melon and pour dressing. Sprinkle herbs and serve immediately.
