Melon Jam

Ingredients
- 2 Cantaloupe melons (ca. 900 g flesh)
- 1 Honeydew melon (ca. 450 g flesh)
- 2 lemons (juiced)
- 1 pack of diet gelatin sugar (e.g., Diet Gel Dream by Südzucker for 1.5 kg fruit)
Instructions

Wash the melons, halve them, remove seeds and cut into wedges, peel and chop into large pieces, put in a blender and puree finely. Add lemon juice.

Add all the gelatin powder to the cold fruit mixture and whisk well with a whisk.

Turn the stove to high heat and stir while heating; when the mixture starts to boil, simmer for 4 minutes, allowing the correct amount of water to evaporate for optimal gelling.

Do a gel test. If the mixture is not yet firm, continue cooking for another 1–2 minutes.

Fill the jam into prepared jars as full as possible and seal immediately after filling. Place on the lid for 10 minutes, flip, and let cool.
