Marinated Cucumber Slices

Ingredients

  • 2 kg pickling cucumbers (as uniform as possible)
  • Salt
  • 1 tbsp piment
  • 1 Tbsp coriander leaves
  • 4 tbsp mustard seeds
  • 4 cinnamon sticks
  • 0.5 l white wine vinegar
  • 75 g sugar

Instructions

    Wash, trim and slice the cucumbers thinly. Sprinkle with salt and let them sit for about 2 hours. Then rinse and pat dry.

    Fill prepared jars (rinsed hot) with piment, coriander, mustard seeds and cinnamon sticks. Layer the cucumber slices on top.

    Boil vinegar with 0.5 l water, 2 tbsp salt and sugar. Pour hot over cucumbers until fully covered. Seal jars tightly, rotate lids after 10 minutes, then let cool. Store in a cool dark place.
