Herring Potato Salad

Ingredients
- 700 g waxy potatoes
- Salt
- 1 radicchio
- 1 chicory
- 3 tbsp natural yogurt
- 2 tbsp Sour cream
- 4 Tbsp mayonnaise
- 0.5 tsp medium-hot mustard
- 2 tbsp white wine vinegar
- pepper (ground)
- 1 bunch dill
- 1 red-skinned apple
- 1 tbsp Lemon Juice
- 400 g herring fillet (oil-packed)
- 60 g peeled walnut kernels
Instructions

Wash the potatoes thoroughly and boil in salted water for about 25 minutes.

Wash, trim, loosen the salad leaves, cut into pieces and distribute on plates.

Whisk together yogurt, sour cream, mayonnaise, mustard, and vinegar; season with salt and pepper. Rinse dill, shake dry, pluck the tips, set aside some for garnish, finely chop the rest.

Wash the apple, quarter it, remove core, dice small; mix immediately with a little lemon juice.

Drain herring well and cut into bite-sized pieces.

Drain potatoes, steam off water, let cool. Slice, then gently combine with apple, herring, and dressing. Taste again and adjust seasoning if needed.

Toast walnuts in a hot pan without added fat until lightly browned, remove, cool, and roughly chop.

Arrange the potato-herring salad on the salad leaves, sprinkle with nuts, garnish with dill tips, and serve.
