Melon Bites with Salmon Tartare, Scallions and Sour Cream

- 1 cantaloupe melon
- 150 g salmon
- 1 Shallot
- 1 tbsp fresh sprouts
- 1 tbsp grape seed oil
- Lemon juice
- Sea salt
- lemon pepper
- 1 tbsp chopped basil
- 200 g Sour Cream
- 1 Spring onion

Halve the melon, remove seeds and peel. Slice into 2.5 cm thick rounds, then cut each round into cubes about 2.5 cm long. Use a Parisienne cutter to scoop out 16 balls from the remaining flesh. Arrange cubes and balls on small bowls and drizzle with lemon juice.

Wash, trim, and slice the green part of the spring onion into slanted thin rings.

Finely chop the salmon. Peel and finely chop the shallot. Wash, dry, and chop the sprouts. Combine salmon, shallot, sprouts and grape seed oil. Season with sea salt, lemon juice and lemon pepper. Place a teaspoonful of this mixture on each melon cube. Top with spring onion rings and drizzle the smooth sour cream over the melon balls. Serve immediately.
