Ingredients
- 2 small zucchini
- 1 small eggplant
- 1 yellow bell pepper
- 1 red bell pepper
- 3 tomatoes
- 1 onion
- 1 Garlic clove
- 4 tbsp olive oil
- Salt
- black pepper (freshly ground)

Clean, wash and slice the zucchini. Wash the eggplant, cut it lengthwise into quarters and then crosswise into slices. Clean, wash and dice the bell peppers. Wash the tomatoes and also dice them.

Peel and dice the onion and garlic. Heat olive oil in a pan over medium heat. Add the garlic, onions and bell peppers and sauté for about 5 minutes, turning occasionally. Add the zucchini and eggplant and cook for another 5–7 minutes. Season with salt and pepper. Add the tomatoes and cook for 2–3 more minutes until done.
