Mediterranean Pasta

Ingredients
- 400 g penne
- 60 ml olive oil
- 4 cloves garlic
- salt (pepper)
- 2 large bell peppers (red and yellow)
- 1 large red onion
- 4 Cherry Tomatoes
- 2 small zucchini
- 100 g black olives (with pits)
- 1 bunch Basil
Instructions

Peel and finely chop the garlic. Wash, seed, and slice the bell peppers into strips. Peel the onion and cut it into rings.

Wash the tomatoes, remove the stem ends, and quarter or eighth them depending on size. Wash the zucchini and slice it into about 0.5 cm thick rounds.

Wash the basil, shake off excess water, and pluck the leaves.

Heat olive oil and garlic in a large pan, add the vegetables and onions, and stir. Sauté over high heat while constantly moving the pan or the vegetables to prevent burning. After a few minutes reduce the heat, add the olives, and let the vegetables simmer while the pasta cooks.

Bring plenty of salted water to a boil in a large pot and cook the Penne according to package instructions until al dente, then drain.

Season the vegetables with salt and pepper, fold in the pasta, and serve garnished with basil leaves.
