Milanese Turkey Piccata

Ingredients

  • 2 cloves garlic
  • 1 onion
  • 6 tbsp Olive oil
  • 1 tbsp Tomato Paste
  • 1 tbsp Lemon Juice
  • Salt
  • pinch of sugar
  • Pepper
  • 1 can peeled tomatoes
  • 400 g spaghetti
  • 100 g Parmesan cheese
  • 8 small turkey cutlets (80 g each)
  • white pepper
  • flour for dredging
  • 2 Eggs
  • 2 tbsp half-whipped cream
  • 2 tbsp clarified butter
  • basil for garnish

Instructions

    Peel and finely chop the garlic and onion. Add 2 tbsp oil to a pan, sauté the garlic and onion. Add tomato paste, cook briefly, season with lemon juice, salt, pepper, and sugar, then add the tomatoes. Cover and simmer gently for about 10 minutes.

    Cook the spaghetti according to package instructions in plenty of salted water until al dente. Grate the parmesan finely. Lightly flatten the cutlets, season with pepper, and dredge them in flour. Whisk together eggs, cream, and parmesan. Dip each cutlet into the egg‑parmesan mixture. Heat the remaining oil with clarified butter in a pan and brown the cutlets on both sides until golden.

    Drain the pasta, mix it with the tomato sauce, and place on warmed plates. Arrange the cutlets beside the pasta and garnish everything with basil leaves.
