Ingredients

  • 200 g Cherry tomatoes
  • 150 g black and green olives (pitted)
  • 2 Garlic cloves
  • 4 stalks coriander leaves
  • 4 tbsp olive oil
  • 1 tbsp Lemon Juice
  • 8 mackerel fillets (ready-to-cook with skin)
  • Salt
  • Pepper

Instructions

    Preheat the oven to 200°C (400°F) with both fan and top heating.

    Wash the tomatoes. Drain the olives. Peel and roughly chop the garlic. Rinse the coriander, shake dry, pluck leaves and roughly chop. Mix the garlic, olive oil, and lemon juice, then spoon a small amount of this mixture into four oven-safe ramekins.

    Rinse the mackerel fillets and pat dry. Place two fillets skin-side down in each ramekin. Add tomatoes and olives to the ramekins and drizzle the remaining garlic‑oil mixture over them. Season with salt and pepper and bake for about 10 minutes.
