Mediterranean Fish Ragout

Hearty and fruity at the same time: Try the delicious Mediterranean fish ragout from Spoonsparrow!
Ingredients
- 500 g fish fillet
- 2 tbsp lemon juice
- 1 onion
- 3 Garlic cloves
- 2 tbsp olive oil
- 3 tomatoes
- 300 ml fish stock (from the jar)
- 2 Tbsp olives
- Salt
- pepper (ground)
- parmesan (block)
Instructions

Cut fish fillet into bite-sized pieces, drizzle with lemon juice and season with salt and pepper.

Peel and finely dice the onion. Peel garlic and slice thinly. Wash tomatoes and chop small.

Heat oil in a pot and sauté onions until soft but not browned. Add garlic and tomatoes, cook briefly, then add stock and simmer for 5 minutes, seasoning with salt and pepper. Add fish pieces and olives, cover and cook another 5 minutes. Serve the Mediterranean fish ragout on plates and grate some parmesan over it.
