Fish Rolls with Grapes

Ingredients
- 4 cinnamon sticks
- 800 g white fish fillet (e.g., monkfish)
- pink pepper
- 200 g green grapes
- 2 red onions
- 30 g butter (2 tbsp)
- 3 star anise
- 250 ml white wine
- Salt
- Pepper
- kitchen twine
Instructions

Break each cinnamon stick into 3 pieces. Rinse the fish under cold water, pat dry and cut into 12 equal pieces. Season with pink pepper, roll up, place one piece of cinnamon on each, and tie with kitchen twine.

Wash grapes, halve and core them. Peel onions, halve and slice into strips.

Heat 1 tbsp butter in a pan. Sauté onions over medium heat until translucent. Add grapes and star anise, deglaze with white wine. Place fish rolls on top, season with salt and pepper, cover and cook over low heat for 10 minutes.

Distribute the fish onto four preheated plates. Stir remaining butter into the sauce. Season with salt and pepper and pour over the fish. Sprinkle with pink pepper before serving.
