Meatloaf with Capers

Ingredients

  • 1 old-fashioned roll
  • 2 tbsp capers
  • 2 pickles
  • 2 tbsp chopped parsley
  • 1 onion
  • 1 tbsp butter
  • 600 g mixed ground meat
  • 1 egg
  • Salt
  • Pepper (freshly ground)
  • 250 ml Beef broth
  • 100 g heavy cream

Instructions

    Soak the roll in lukewarm water. Finely chop the capers and pickles. Peel and finely dice the onion, then sauté it in hot butter until translucent. Mix the drained roll, ground meat, capers, pickles, parsley, onions, egg, salt, and pepper thoroughly. With damp hands shape four small meatloafs, place them in a greased baking dish, and bake in a preheated oven at 200°C (middle rack) for about 35 minutes.

    Remove the meatloaves with capers and set aside warm. Deglaze the pan with broth, pour into a saucepan, add the cream, and let it simmer briefly. Taste and thicken with cornstarch if desired. Serve with potatoes and a green salad.
