Meatloaf Cake with Pineapple

Ingredients
- 1 old-fashioned roll
- 3 onions
- 1 Garlic clove
- 800 g mixed ground meat
- 2 Eggs
- 1 tsp Mustard
- 2 tbsp breadcrumbs (as needed)
- Salt
- Pepper (freshly ground)
- 60 g bacon cubes
- 6 slices pineapple (canned)
- 6 slices cheese (e.g. cheddar)
- 6 tbsp lingonberries

Preheat the oven to 200°C with upper and lower heat. Soak the roll in cold water. Peel the onions and garlic clove and dice finely. Squeeze out excess water from the roll and mix it with the ground meat, onion and garlic cubes, eggs, mustard and breadcrumbs. Season with salt and pepper. Spread the mixture into a baking pan lined with parchment paper (about 20x30 cm) and press flat. Sprinkle bacon on top and bake in the oven for about 45 minutes. In the last 20 minutes place pineapple slices over the meatloaf, each topped with a slice of cheese, and finish baking.

For serving, add 1 tbsp lingonberries into the depressions and serve cut into pieces.
