Ground Beef Pancake Cake

Ingredients

  • 200 g Flour
  • Salt
  • 0.5 l water
  • 4 eggs
  • 150 g ground beef
  • 1 large onion
  • 125 g mozzarella
  • 2 meat tomatoes
  • 200 g arugula
  • 1 tbsp Olive Oil
  • Salt
  • freshly ground pepper
  • 0.125 l dry sherry
  • 100 g Parmesan

Instructions

    Whisk flour, salt and water until smooth. Cover and let rise for about 30 minutes. Wash, trim and finely chop the arugula. Peel and finely dice the onion. Cut mozzarella into small cubes. Heat oil in a pan, sauté the onion until translucent. Add ground beef and cook, stirring, until crumbly. Add arugula and continue cooking until it wilts. Deglaze with sherry and season with salt and plenty of pepper. Boil meat tomatoes, cool, peel skins off and slice very thin.

    Beat eggs into the batter. Pour a little oil in a skillet. Fry about 12 pancakes from the batter, adding more oil as needed. Preheat oven to 160 °C. Layer each pancake with beef sauce, mozzarella cubes and tomato slices, stacking them.

    Sprinkle grated parmesan over the stack and bake for 15 minutes on the lower rack.
