Meatballs with Tomato Sauce

Ingredients
- 600 g ground beef
- 1 shallot (finely chopped)
- 1 garlic clove (finely chopped)
- 1 roll of bread
- breadcrumbs
- 2 Eggs
- 2 tbsp parsley (chopped)
- 1 tbsp thyme leaves (chopped)
- 1 tbsp mustard
- oil (for frying)
- Salt
- Pepper (freshly ground)
- Tomato sauce
- 400 g diced tomatoes (canned)
- 1 garlic clove (finely chopped)
- 1 shallot (chopped)
- a pinch of sugar
- Salt
- Pepper (freshly ground)
- 200 ml vegetable broth
- thyme leaves (for garnish)
Instructions

Heat 2 tbsp oil for the sauce and sauté shallot and garlic. Add tomatoes and broth, simmer about 20 minutes. Season with sugar, salt, and pepper.

Soak bread in lukewarm water for the meatballs.

Sauté shallot and garlic in 1 tbsp oil, add chopped parsley and thyme, let cool slightly. Then mix eggs, drained bread, paprika, mustard, and ketchup into the ground beef; add breadcrumbs if needed until dough is firm but not too soft. Season well with salt and pepper.

Form small balls and fry in hot oil for about 10 minutes on all sides until golden brown.

Plate meatballs with tomato sauce, sprinkle thyme leaves, and serve.
