Pan-Seared Zander on Spinach

Ingredients

  • 2 zander fillets (about 200 g, with skin)
  • Salt
  • Pepper (freshly ground)
  • 1 tbsp flour
  • 2 tbsp butter
  • 600 g Spinach
  • 1 Garlic clove
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 4 tbsp crème fraîche
  • 4 tsp capers

Instructions

    Wash and dry the spinach, then shake off excess water. Peel the garlic.

    Season the zander with salt and pepper, then dust the flesh side with flour.

    Heat olive oil in a pan, press in the garlic, add spinach and stir until it wilts, about 3-4 minutes; season with salt and pepper and stir in lemon juice.

    In another pan heat butter and cook the fillets skin-side down over medium heat for about 5 minutes.

    To serve, arrange the spinach on a plate topped with zander fillets, add a tablespoon of crème fraîche to each, and sprinkle with capers.
