Chicken Fillets with Fried Apricots

Ingredients
- 4 chicken breast fillets (150 g each)
- 1 tbsp peppercorns
- 1 tsp mustard seeds
- 1 tsp coriander seeds
- 1 tsp cumin
- 500 g apricots
- 2 tbsp olive oil
- 2 tbsp butter
- 1 tbsp honey
- 2 tbsp white wine vinegar
- 150 ml orange juice
- pepper (ground)

Wash chicken breasts, pat dry and briefly sear in 2 tbsp hot oil on all sides. Remove from pan.

Crush peppercorns, mustard seeds, coriander seeds, and cumin in a mortar. Stir in two tablespoons of oil. Salt the chicken and place on parchment paper-lined tray. Spread spice paste over and bake at 160°C (325°F) for about 10 minutes until cooked through.

Wash apricots, halve or quarter and pit them. In a pan, caramelize butter with honey, add apricots and sauté. Deglaze with vinegar and let reduce briefly. Remove half of the apricots and pour in orange juice. Blend the mixture into a smooth sauce with an immersion blender, season with pepper, then return the apricots.

Take chicken from oven, let rest briefly, slice, plate on bowls, spoon sauce over, and serve with rice if desired.
