Meatball Skillet with Potatoes, Bacon and Spring Onions

Ingredients
- 750 g cooked potatoes (preferably waxy)
- 1 tsp cumin
- 150 g thick-cut bacon
- butter for frying
- 1 bundle spring onions
- 300 g Ground Beef
- 1 egg
- 1 onion
- 1 Garlic clove
- 0.5 tsp mustard
- a pinch marjoram
- 2 tbsp breadcrumbs
- Salt
- pepper (ground)
- butter for cooking
Instructions

Place the ground beef in a bowl. Peel and finely dice the onion and garlic, then mix with mustard, marjoram, breadcrumbs, salt and pepper. Form small meatballs from the mixture.

Heat enough butter in a pan so the meatballs can almost "float"; fry them all around for about 7 minutes and set aside warm.

Peel the potatoes and slice them. Dice the bacon finely. Heat some butter and sauté the bacon until crisp. Add the potatoes and cook until golden on all sides.

Meanwhile, trim the spring onions, cut them diagonally into slices, and add them in the last 2 minutes of cooking. Mix the meatballs into the finished potato skillet and season again with salt and pepper if needed.
