- 0.5 untreated lemon (zest and juice)
- 125 ml rapeseed oil

All ingredients for the mayonnaise should be at room temperature. Whisk the egg yolk with salt, mustard, and 1 tbsp lemon juice vigorously. Then add a few drops of oil using a whisk or hand mixer, gradually pouring in the remaining oil in a thin stream.

Always pour only enough oil so that it is immediately bound by the egg yolk, creating a creamy mayonnaise. Stir in the lemon zest and herbs, then season with lemon juice, salt, and pepper. Cover and refrigerate.
