Ingredients
- 12 Maultaschen with spinach filling (refrigerated, ready-made)
- 2 red bell peppers
- 1 Zucchini
- 1 onion
- 1 Garlic clove
- 2 tbsp olive oil
- 1 tbsp Tomato Paste
- 50 ml red wine
- 100 ml Vegetable broth
- 1 tbsp mixed Italian herbs
- Salt
- black pepper (freshly ground)
- basil (for garnish)
Instructions

Cook the Maultaschen in plenty of salted water according to package instructions, about 10 minutes.

While they cook, wash the bell peppers, halve them, remove seeds and dice.

Dice the zucchini. Peel the onion and garlic; roughly cube the onion and finely mince the garlic.

Sauté all vegetables in hot olive oil until translucent. Add herbs and tomato paste and sauté briefly. Deglaze with red wine and broth, simmer for about 5 minutes, then season with salt and pepper.

Drain the Maultaschen, plate them, top with the sautéed vegetable mix, and garnish with basil before serving.
