Matjeshering with Onion-Apple Sauce by Spoonsparrow: Fine-spicy combination!

Ingredients

  • 8 matjes fillets
  • 4 Spring Onions
  • 2 sour apples
  • 200 g Sour Cream
  • 150 g Yogurt (3.5% fat)
  • 1 tsp Mustard
  • 1 tbsp Lemon Juice
  • Salt
  • a pinch raw cane sugar
  • freshly ground pepper
  • cress

Instructions

    Rinse the matjes fillets and pat them dry. Wash, trim, and slice the spring onions into slanted rings. Wash the apples, quarter them, remove the core. Cut one apple quarter into strips and set aside; dice the remaining quarters.

    Whisk together the sour cream, yogurt, mustard, and lemon juice until smooth. Season with salt, sugar, and pepper. Fold in the apple cubes and spring onions, then arrange the matjes fillets on plates.

    Serve the matjes fillets garnished with apple strips and cress.
