Ingredients

  • 8 matjes fillets
  • 100 g mayonnaise
  • 100 g Sour cream
  • 2 tbsp pickling liquid
  • Pepper (freshly ground)
  • 1 pinch sugar
  • 2 red onions
  • 2 pickled cucumbers
  • 2 tart apples
  • 1 bunch dill
  • Salad leaves
  • 8 lemon slices

Instructions

    Soak the fillets in cold water for about 30 minutes. Whisk together mayonnaise, sour cream and cucumber liquid; season with pepper and sugar.

    Peel and thinly slice the onions into rings. Dice the pickled cucumbers finely. Wash the apples, quarter them, remove cores and slice thinly.

    Combine the sauce with onions, cucumbers and apple slices. Rinse the dill, set aside a few sprigs, chop the rest finely and fold in.

    Remove the Matjes from water, pat dry and arrange on a platter. Spoon the sauce over the fish, garnish with salad leaves, lemon slices and dill sprigs, then serve.
